Zupfbrötchen are delightful German pull-apart rolls that are fluffy, soft, and perfect for any occasion.

Ingredients

  • 500 grams all-purpose flour
  • 300 ml warm milk
  • 1 packet instant yeast
  • 50 grams sugar
  • 75 grams unsalted butter, melted
  • 1 egg
  • 1 teaspoon salt
  • Sesame seeds for topping

Instructions

  1. In a large bowl, combine warm milk, sugar, and yeast. Let it sit for 10 minutes until frothy.
  2. Add melted butter, egg, and salt to the yeast mixture.
  3. Gradually mix in the flour until a dough forms.
  4. Knead the dough on a floured surface for about 10 minutes until smooth.
  5. Place the dough in a greased bowl, cover, and let rise for 1 hour, or until doubled in size.
  6. Punch down the risen dough and divide it into small pieces.
  7. Shape each piece into a ball and place them in a greased baking dish.
  8. Cover and let rise for another 30 minutes.
  9. Preheat the oven to 180°C (350°F).
  10. Brush the rolls with melted butter and sprinkle sesame seeds on top.
  11. Bake for 25-30 minutes or until golden brown.
  12. Allow to cool slightly before serving.

Notes

  • These rolls are best served warm.
  • They can also be frozen and reheated later.
