Delicious and crispy zucchini fritters perfect as a snack or side dish.

Ingredients

  • 2 cups grated zucchini
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 garlic clove, minced
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 tablespoon chopped fresh parsley
  • oil for frying

Instructions

  1. Grate the zucchini and place it in a clean dish towel. Squeeze out excess moisture.
  2. In a bowl, combine the grated zucchini, egg, flour, Parmesan, garlic, salt, pepper, paprika, and parsley.
  3. Heat oil in a frying pan over medium heat.
  4. Drop spoonfuls of the mixture into the hot oil, flattening them slightly.
  5. Fry until golden brown on both sides, about 3-4 minutes per side.
  6. Remove and drain on paper towels.

Notes

  • For extra crispiness, let the mixture sit for 10 minutes before frying.
  • Serve with sour cream or yogurt for dipping.
