- 2 cups grated zucchini
- 1 large egg
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 garlic clove, minced
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1 tablespoon chopped fresh parsley
- oil for frying
- Grate the zucchini and place it in a clean dish towel. Squeeze out excess moisture.
- In a bowl, combine the grated zucchini, egg, flour, Parmesan, garlic, salt, pepper, paprika, and parsley.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the mixture into the hot oil, flattening them slightly.
- Fry until golden brown on both sides, about 3-4 minutes per side.
- Remove and drain on paper towels.
Notes
- For extra crispiness, let the mixture sit for 10 minutes before frying.
- Serve with sour cream or yogurt for dipping.
