- 2 cups grated zucchini
- 1 onion, finely chopped
- 1 cup breadcrumbs
- 2 eggs
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil
- Preheat the oven to 200°C (400°F).
- In a bowl, combine grated zucchini, onion, breadcrumbs, eggs, garlic powder, salt, pepper, and parsley.
- Mix until well combined and form into patties.
- Heat olive oil in a skillet over medium heat and cook each patty for 3-4 minutes per side until golden brown.
- Transfer to a baking sheet and finish cooking in the oven for another 10 minutes.
Notes
- For a vegan option, substitute eggs with flaxseed meal.
- Serve with yogurt or sour cream dip.
