- 200g ground almonds
- 200g powdered sugar
- 2 egg whites
- 1 teaspoon cinnamon
- 1 teaspoon lemon juice
- 100g powdered sugar (for icing)
- Preheat the oven to 150°C (300°F).
- In a bowl, mix the ground almonds, powdered sugar, egg whites, cinnamon, and lemon juice until combined.
- Roll out the dough on a lightly powdered surface to about 1 cm thick.
- Cut out star shapes using a cookie cutter.
- Place the stars on a baking sheet lined with parchment paper.
- In a separate bowl, whip the egg whites until stiff peaks form, then gradually add in the powdered sugar for the icing.
- Spread the icing over the cookies.
- Bake for about 20 minutes until firm but not browned.
- Let cool completely before serving.
Notes
- For a more festive flavor, add a pinch of cloves or allspice.
- Store cookies in an airtight container for up to two weeks.
