- 2 medium eggplants
- 4 medium tomatoes
- 3 cloves garlic
- 1/4 cup olive oil
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt to taste
- 2 tablespoons chopped fresh parsley
- Roast the eggplants over an open flame or in a broiler until the skin is charred and the flesh is soft.
- Let the eggplants cool, then peel off the skin and chop the flesh.
- In a skillet, heat the olive oil over medium heat. Add chopped garlic and sauté until fragrant.
- Add the chopped tomatoes, and cook until they break down and form a sauce.
- Add the eggplant, cumin, paprika, cayenne, and salt. Mix well and cook for another 10 minutes.
- Stir in chopped parsley before serving.

- Serve Zaalouk warm or at room temperature as a side dish.
