Zaalouk is a traditional Moroccan dish made from eggplant and tomatoes, typically served as a salad or side dish.

Ingredients

  • 2 medium eggplants
  • 4 medium tomatoes
  • 3 cloves garlic
  • 1/4 cup olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Roast the eggplants over an open flame or in a broiler until the skin is charred and the flesh is soft.
  2. Let the eggplants cool, then peel off the skin and chop the flesh.
  3. In a skillet, heat the olive oil over medium heat. Add chopped garlic and sauté until fragrant.
  4. Add the chopped tomatoes, and cook until they break down and form a sauce.
  5. Add the eggplant, cumin, paprika, cayenne, and salt. Mix well and cook for another 10 minutes.
  6. Stir in chopped parsley before serving.

Notes

  • Serve Zaalouk warm or at room temperature as a side dish.
  • It pairs well with grilled meats or as part of a mezze platter.
