Ingredients

  • 4 pieces veal or pork cutlets
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 cup breadcrumbs
  • 1/2 cup pumpkin puree
  • 2 tablespoons Dijon mustard
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a bowl, combine pumpkin puree and mustard, season with salt and pepper.
  2. Flatten the cutlets using a meat mallet and season both sides with salt and pepper.
  3. Set up a breading station with flour, beaten eggs, and breadcrumbs.
  4. Dip each cutlet in flour, then into the egg, and finally in the breadcrumbs.
  5. Heat oil in a large skillet over medium heat and fry the schnitzels until golden brown on both sides.
  6. Serve hot, topped with the pumpkin mustard mixture.
