This delicious vegan Donauwelle dessert features layers of chocolate and vanilla cake topped with a creamy vegan frosting and cherries.

Ingredients

  • 250 g all-purpose flour
  • 200 g sugar
  • 100 g cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 250 ml almond milk
  • 100 ml vegetable oil
  • 1 tsp vanilla extract
  • 200 g cherries
  • 200 g vegan butter
  • 400 g powdered sugar
  • 2 tbsp cocoa powder

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add almond milk, vegetable oil, and vanilla extract to the dry ingredients and mix until smooth.
  4. Divide the batter into two bowls. In one bowl, add cocoa powder for the chocolate batter.
  5. Pour half of the vanilla batter into a prepared baking pan, then add the chocolate batter on top.
  6. Drop cherries evenly on top of the chocolate layer and then pour the remaining vanilla batter over.
  7. Bake for about 40-45 minutes or until a toothpick comes out clean.
  8. Let cool, then prepare the frosting by beating vegan butter and powdered sugar together until creamy, adding cocoa powder for the chocolate frosting.
  9. Spread the frosting over the cooled cake and decorate as desired.

Notes

  • Store the cake in the refrigerator for a firmer texture.
  • For a richer flavor, let the cake sit overnight before serving.
