Delicious vegan empanadas filled with a savory mixture, perfect for a snack or main dish.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup vegetable oil
  • 1/2 cup cold water
  • 1 teaspoon salt
  • 1 cup cooked lentils
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped onions
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon olive oil

Instructions

  1. In a large bowl, mix flour and salt. Add oil and cold water until dough forms. Knead for 5 minutes and let it rest.
  2. In a pan, heat olive oil over medium heat. Sauté onions, garlic, and bell peppers until soft.
  3. Add cooked lentils and spices. Stir until well combined. Remove from heat.
  4. Preheat oven to 375°F (190°C).
  5. Roll out dough and cut into circles. Place filling in the center and fold over, sealing edges.
  6. Place empanadas on a baking sheet and bake for 25-30 minutes until golden brown.

Notes

  • Empanadas can be frozen before baking for later use.
  • Feel free to customize the filling with your favorite vegetables.
