- 2 cups all-purpose flour
- 1/2 cup vegetable oil
- 1/2 cup cold water
- 1 teaspoon salt
- 1 cup cooked lentils
- 1/2 cup diced bell peppers
- 1/2 cup chopped onions
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1 tablespoon olive oil
- In a large bowl, mix flour and salt. Add oil and cold water until dough forms. Knead for 5 minutes and let it rest.
- In a pan, heat olive oil over medium heat. Sauté onions, garlic, and bell peppers until soft.
- Add cooked lentils and spices. Stir until well combined. Remove from heat.
- Preheat oven to 375°F (190°C).
- Roll out dough and cut into circles. Place filling in the center and fold over, sealing edges.
- Place empanadas on a baking sheet and bake for 25-30 minutes until golden brown.
Notes
- Empanadas can be frozen before baking for later use.
- Feel free to customize the filling with your favorite vegetables.
