A delicious Trinidadian dish made primarily of corn.

Ingredients

  • 1 can sweet corn
  • 1 cup milk
  • 2 eggs
  • 1 cup cheese, grated
  • 1/2 cup flour
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter, melted
  • 1/2 cup bell pepper, diced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine sweet corn, milk, eggs, and melted butter.
  3. Mix in the flour, sugar, salt, black pepper, and cheese until smooth.
  4. Add the diced bell pepper and stir well.
  5. Pour the mixture into a greased baking dish.
  6. Bake for 30-40 minutes or until golden brown.
  7. Let cool for a few minutes before serving.
