A delicious pesto made with sun-dried tomatoes and feta cheese, perfect for pasta dishes or as a dip.

Ingredients

  • 200 grams sun-dried tomatoes
  • 100 grams feta cheese
  • 50 grams pine nuts
  • 2 cloves garlic
  • 100 ml olive oil
  • 1 teaspoon dried oregano
  • Salt to taste

Instructions

  1. In a food processor, combine the sun-dried tomatoes, feta cheese, pine nuts, garlic, and oregano.
  2. Blend until smooth.
  3. With the machine running, slowly add the olive oil until the mixture is well combined.
  4. Season with salt to taste.
  5. Serve over pasta or as a dip.

Notes

  • This pesto can be stored in an airtight container in the fridge for up to one week.
  • For a spicier kick, add some red pepper flakes.
