  • 1 can black-eyed peas, drained and rinsed
  • 1 can corn, drained
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, diced
  • 2 jalapeños, seeded and minced
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large bowl, combine the black-eyed peas, corn, red bell pepper, green bell pepper, red onion, jalapeños, and cilantro.
  2. In a separate bowl, whisk together the olive oil, red wine vinegar, lime juice, garlic powder, salt, and black pepper.
  3. Pour the dressing over the vegetable mixture and toss to combine.
  4. Cover and refrigerate for at least 2 hours before serving to allow the flavors to meld.
  5. Serve with tortilla chips or use as a topping for grilled meats.

Notes

  • This recipe can be made a day in advance for best flavor.
  • Feel free to adjust the heat by adding more or less jalapeño.
