A delicious Cajun-inspired dish combining rice, sausage, chicken, and seafood.

Ingredients

  • 1 pound andouille sausage
  • 1 pound chicken thighs, diced
  • 1 cup onion, chopped
  • 1 cup green bell pepper, chopped
  • 1 cup celery, chopped
  • 4 cloves garlic, minced
  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 tablespoon Cajun seasoning
  • 1 pound shrimp, peeled and deveined
  • 1/2 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the sausage over medium heat. Remove and set aside.
  2. Add chicken to the pot and cook until browned. Remove and set aside.
  3. Add onion, bell pepper, celery, and garlic to the pot. Cook until softened.
  4. Stir in the rice and cook for a few minutes until slightly toasted.
  5. Pour in the chicken broth and tomatoes; add Cajun seasoning.
  6. Bring to a boil, then reduce heat and cover. Simmer for 20 minutes.
  7. Stir in shrimp, sausage, and chicken; cover and cook until shrimp are pink and rice is fully cooked, about 5-10 minutes.
  8. Garnish with green onions before serving.

Notes

  • This dish is best served hot and can be garnished with additional green onions.
  • Feel free to adjust the spice level by varying the Cajun seasoning.
