- 250 grams all-purpose flour
- 125 grams butter
- 75 grams powdered sugar
- 1 egg yolk
- 1 teaspoon vanilla extract
- 100 grams dark chocolate
- 200 grams orange curd
- 1 pinch salt
- Preheat the oven to 180°C (350°F).
- In a bowl, mix together the flour, salt, butter, powdered sugar, egg yolk, and vanilla extract to form a dough.
- Wrap the dough in plastic wrap and refrigerate for 1 hour.
- Roll out the chilled dough on a floured surface to about 0.5 cm thick.
- Cut out cookie shapes and make a hole in the center of half of them.
- Place the cookies on a baking sheet and bake for about 10-12 minutes.
- Let them cool completely.
- Melt the dark chocolate and spread it on the cookies without holes.
- Once the chocolate sets, add a dollop of orange curd on top of the chocolate and place the cookies with holes on top to create a sandwich.
- Dust with powdered sugar before serving.
Notes
- For a more intense orange flavor, you can add a teaspoon of orange zest to the curd.
- These cookies can be stored in an airtight container for up to a week.
