- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups fresh spinach, washed and chopped
- 4 cups vegetable broth
- 1 potato, peeled and diced
- Salt to taste
- Pepper to taste
- 1/2 cup heavy cream
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and garlic, sauté until translucent.
- Add the diced potato and vegetable broth, bring to a boil.
- Reduce heat and simmer until the potatoes are tender.
- Add the chopped spinach and cook for an additional 5 minutes.
- Puree the soup with an immersion blender until smooth.
- Stir in the heavy cream and season with salt and pepper.
- Serve hot.
Notes
- This soup can be served with a dollop of sour cream on top.
- Add some croutons for extra crunch.
