A delicious and nutritious spinach soup, perfect for a light meal or appetizer.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh spinach, washed and chopped
  • 4 cups vegetable broth
  • 1 potato, peeled and diced
  • Salt to taste
  • Pepper to taste
  • 1/2 cup heavy cream

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, sauté until translucent.
  3. Add the diced potato and vegetable broth, bring to a boil.
  4. Reduce heat and simmer until the potatoes are tender.
  5. Add the chopped spinach and cook for an additional 5 minutes.
  6. Puree the soup with an immersion blender until smooth.
  7. Stir in the heavy cream and season with salt and pepper.
  8. Serve hot.

Notes

  • This soup can be served with a dollop of sour cream on top.
  • Add some croutons for extra crunch.
