- 150 g sugar
- 100 g butter
- 3 eggs
- 1 tsp baking powder
- 1 pinch salt
- 400 g vanilla pudding
- 200 g apricots (halved)
- 1 tbsp powdered sugar
- Preheat the oven to 180°C (356°F).
- Cream the butter and sugar together until light and fluffy.
- Add eggs one at a time and mix well.
- Sift in the flour, baking powder, and salt, and mix until combined.
- Pour the batter into a greased baking pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Prepare the vanilla pudding according to package instructions.
- Once the cake has cooled, spread the pudding over the top.
- Arrange the halved apricots on top to resemble fried eggs.
- Dust with powdered sugar before serving.
