- 6 large eggs
- 1 large onion
- 1 cup olive oil
- Salt to taste
- Peel and slice the potatoes and onion thinly.
- Heat the olive oil in a large frying pan over medium heat.
- Add the potatoes and onions, season with salt, and cook until tender.
- In a separate bowl, beat the eggs.
- Drain the potatoes and onions and mix them into the eggs.
- Return the mixture to the pan and cook until set on the bottom.
