A delicious smashed egg sandwich recipe that is perfect for breakfast or a light lunch.

Ingredients

  • 4 large eggs
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 slices of bread
  • 1 tablespoon butter
  • 1 lettuce leaf
  • 2 slices of tomato

Instructions

  1. Hard boil the eggs for about 10 minutes, then peel and chop them.
  2. In a bowl, combine the chopped eggs, mayonnaise, Dijon mustard, salt, and black pepper.
  3. Spread the egg mixture on a slice of bread.
  4. Add the lettuce and tomato slices on top.
  5. Top with the second slice of bread and press down gently.
  6. Melt butter in a skillet over medium heat and toast the sandwich until golden brown on both sides.
  7. Slice and serve warm.

Notes

  • Add your favorite herbs for extra flavor.
  • Can be served with avocado for a creamier texture.
