- 4 large eggs
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 slices of bread
- 1 tablespoon butter
- 1 lettuce leaf
- 2 slices of tomato
- Hard boil the eggs for about 10 minutes, then peel and chop them.
- In a bowl, combine the chopped eggs, mayonnaise, Dijon mustard, salt, and black pepper.
- Spread the egg mixture on a slice of bread.
- Add the lettuce and tomato slices on top.
- Top with the second slice of bread and press down gently.
- Melt butter in a skillet over medium heat and toast the sandwich until golden brown on both sides.
- Slice and serve warm.
