Slow Cooker Barbacoa is a flavorful and tender beef dish, perfect for tacos, burritos, and more.

Ingredients

  • 3 pounds chuck roast
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon oregano
  • 1 cup beef broth
  • 1/4 cup lime juice
  • 1/4 cup apple cider vinegar
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 2 chipotle peppers in adobo sauce

Instructions

  1. Season the chuck roast with salt, pepper, cumin, paprika, and oregano.
  2. Place the seasoned roast in the slow cooker.
  3. In a separate bowl, mix together the beef broth, lime juice, apple cider vinegar, garlic, onion, and chipotle peppers.
  4. Pour the mixture over the roast in the slow cooker.
  5. Cook on low for 8 hours or until the meat is tender and easily shreds.
  6. Shred the beef with a fork and mix it with the cooking juices.
  7. Serve in tacos, burritos, or your favorite dishes.

Notes

  • For an extra kick, add more chipotle peppers.
  • This barbacoa can be stored in the refrigerator for up to 4 days.
