Serviettenknödel are soft, steamed dumplings made from bread and flour, typically served as a side dish with various meats and gravies.

Ingredients

  • 250 grams stale white bread
  • 200 ml milk
  • 2 eggs
  • 50 grams butter
  • 1 onion, finely chopped
  • 2 tablespoons parsley, chopped
  • 200 grams all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon nutmeg

Instructions

  1. Cut the stale bread into small cubes and place in a bowl.
  2. Heat the milk and pour it over the bread cubes. Let it soak for about 10 minutes.
  3. In a skillet, melt the butter and sauté the chopped onion until translucent.
  4. Add the sautéed onion, chopped parsley, eggs, flour, salt, and nutmeg to the soaked bread mixture. Mix until combined.
  5. Shape the mixture into a log and wrap it in a clean kitchen towel.
  6. Steam the wrapped log for about 30-40 minutes.
  7. Once cooked, slice the dumplings and serve warm.

Notes

  • These dumplings can be prepared ahead of time and refrigerated until ready to steam.
  • They pair well with rich meat dishes and gravies.
