These are traditional German sourdough rolls, known for their crispy crust and soft interior.

Ingredients

  • 500 grams bread flour
  • 300 grams water
  • 100 grams sourdough starter
  • 10 grams salt
  • 5 grams sugar
  • 5 grams active dry yeast

Instructions

  1. In a large mixing bowl, combine the bread flour, sugar, and salt.
  2. In a separate bowl, mix the water, sourdough starter, and yeast until dissolved.
  3. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  4. Knead the dough for about 10 minutes until smooth.
  5. Let the dough rise in a warm place for 2 hours, or until doubled in size.
  6. Preheat the oven to 220°C (428°F).
  7. Punch down the dough and shape into rolls.
  8. Place the rolls on a baking sheet and let rise for another 30 minutes.
  9. Bake for 20-25 minutes until golden brown.

Notes

  • For a more pronounced sour flavor, let the dough rise longer.
  • These rolls are best served fresh out of the oven.
