A delicious and vibrant beet dip that’s perfect for snacking or entertaining.

Ingredients

  • 2 medium cooked beets
  • 1 cup Greek yogurt
  • 1 tablespoon tahini
  • 1 tablespoon lemon juice
  • 1 clove garlic
  • 1 tablespoon olive oil
  • salt to taste
  • pepper to taste

Instructions

  1. In a food processor, combine the cooked beets, Greek yogurt, tahini, lemon juice, garlic, and olive oil.
  2. Blend until smooth and creamy.
  3. Season with salt and pepper to taste.
  4. Transfer to a serving bowl and enjoy with pita chips or fresh vegetables.

Notes

  • For a spicier kick, add a pinch of cayenne pepper.
