- 200g flour
- 100g sugar
- 150g red currants
- 1 egg
- 50ml milk
- 50g butter
- 1 tsp vanilla extract
- 1 tsp baking powder
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the flour, sugar, and baking powder.
- In another bowl, whisk together the egg, milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until well combined.
- Gently fold in the red currants.
- Pour the mixture into a greased baking dish.
- Bake in the preheated oven for about 30-35 minutes or until golden brown.
- Remove from the oven and let cool before serving.
Notes
- Can be served warm or cold.
- Add a dusting of powdered sugar on top for extra sweetness.
