Deliciously moist and beautifully red, these Red Velvet Cupcakes are perfect for any celebration!

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cocoa powder
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 cup cream cheese frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a medium bowl, mix together the flour, sugar, baking soda, salt, and cocoa powder.
  3. In a large bowl, combine the vegetable oil and buttermilk. Whisk in the eggs, red food coloring, vanilla extract, and vinegar.
  4. Gradually add the dry ingredients to the wet ingredients and mix until well combined.
  5. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  6. Bake for 20-22 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  8. Once cooled, frost with cream cheese frosting.

Notes

  • For extra flavor, add a teaspoon of espresso powder to the batter.
  • These cupcakes can be stored in an airtight container for up to 3 days.
  • Feel free to decorate with red sprinkles for a festive touch!
