- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cocoa powder
- 1 cup vegetable oil
- 1 cup buttermilk
- 2 large eggs
- 2 tablespoons red food coloring
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 1 cup cream cheese frosting
- Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
- In a medium bowl, mix together the flour, sugar, baking soda, salt, and cocoa powder.
- In a large bowl, combine the vegetable oil and buttermilk. Whisk in the eggs, red food coloring, vanilla extract, and vinegar.
- Gradually add the dry ingredients to the wet ingredients and mix until well combined.
- Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
- Bake for 20-22 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
- Once cooled, frost with cream cheese frosting.
Notes
- For extra flavor, add a teaspoon of espresso powder to the batter.
