A refreshing and tropical dessert made with pitahaya and coconut.

- 1 ripe pitahaya (dragon fruit)
- 400 ml coconut milk
- 2 tablespoons honey or agave syrup
- 1 teaspoon vanilla extract
- 1 pinch salt
- Cut the pitahaya in half and scoop out the flesh.
- In a blender, combine the pitahaya flesh, coconut milk, honey, vanilla extract, and salt. Blend until smooth.
- Pour the mixture into serving bowls and refrigerate for at least 1 hour.
- Serve chilled, garnished with additional pitahaya slices or coconut shavings if desired.
Notes
- This recipe can be made vegan by using agave syrup instead of honey.
- For added texture, consider mixing in some chia seeds.
