- 400 g Pasta of your choice
- 100 g Pistachios
- 2 cloves Garlic
- 50 g Parmesan cheese
- 150 ml Olive oil
- 1 bunch Basil
- 200 g Burrata cheese
- Salt and pepper to taste
- Cook the pasta in salted water according to package instructions.
- In a blender, combine pistachios, garlic, Parmesan, basil, salt, and pepper.
- While blending, slowly drizzle in the olive oil until smooth.
- Drain the pasta and mix in the pistachio pesto.
- Top with torn burrata cheese and serve immediately.
Notes
- For a creamier pesto, add a bit more olive oil.
- Fresh burrata adds a luxurious texture to the dish.
