A delicious and tropical twist on the classic sheet cake, this Pina Colada Blechkuchen is infused with pineapple and coconut flavors.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut milk
  • 1 cup crushed pineapple, drained
  • 1 cup shredded coconut

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a bowl, mix flour, baking powder, baking soda, and salt.
  3. In another bowl, beat the eggs and sugar until pale.
  4. Add the softened butter, vanilla extract, and coconut milk to the egg mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. Fold in the crushed pineapple and shredded coconut.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for about 25-30 minutes or until a toothpick comes out clean.
  9. Let it cool before serving.

  • For extra flavor, top with whipped cream and additional shredded coconut.
