Pfitzauf is a German baked dish similar to a Dutch baby pancake, perfect for serving breakfast or dessert.

  • 1 cup milk
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, whisk together eggs, milk, flour, sugar, vanilla, and salt until smooth.
  3. In a cast-iron skillet, melt butter over medium heat.
  4. Pour the batter into the skillet and transfer it to the oven.
  5. Bake for 20-25 minutes or until puffed and golden brown.
  6. Remove from the oven, dust with powdered sugar, and serve immediately.
