- 200 grams walnuts
- 200 grams hazelnuts
- 100 grams breadcrumbs
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon thyme leaves
- 1 tablespoon soy sauce
- 500 ml vegetable broth
- Preheat the oven to 180°C (350°F).
- In a pan, heat the olive oil and sauté the onion and garlic until translucent.
- Chop the walnuts and hazelnuts and mix them with the breadcrumbs, sautéed onions and garlic, salt, pepper, parsley, thyme, and soy sauce.
- Add vegetable broth as needed to bind the mixture.
- Form the mixture into a loaf shape and place it in a baking dish.
- Bake for 45-50 minutes until golden brown.
- Let it rest before slicing and serving.
