A refreshing no-bake cheesecake dessert with pineapple that is perfect for summer gatherings.

Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 can (20 oz) crushed pineapple, drained
  • 1 cup shredded coconut
  • 1/2 cup chopped pecans (optional)

Instructions

  1. In a medium bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of a 9×13 inch pan.
  2. In a large mixing bowl, beat cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing until creamy.
  3. In another bowl, whip heavy cream until stiff peaks form and gently fold into the cream cheese mixture.
  4. Fold in crushed pineapple, shredded coconut, and chopped pecans if using.
  5. Spread the mixture over the graham cracker crust in the pan and smooth the top.
  6. Chill in the refrigerator for at least 4 hours before serving.

Notes

  • For a tropical twist, add extra pineapple on top before serving.
  • This dessert can be made a day in advance for best results.
