- 1 cup graham cracker crumbs
- 1/2 cup butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 can (20 oz) crushed pineapple, drained
- 1 cup shredded coconut
- 1/2 cup chopped pecans (optional)
- In a medium bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of a 9×13 inch pan.
- In a large mixing bowl, beat cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing until creamy.
- In another bowl, whip heavy cream until stiff peaks form and gently fold into the cream cheese mixture.
- Fold in crushed pineapple, shredded coconut, and chopped pecans if using.
- Spread the mixture over the graham cracker crust in the pan and smooth the top.
- Chill in the refrigerator for at least 4 hours before serving.
Notes
- For a tropical twist, add extra pineapple on top before serving.
- This dessert can be made a day in advance for best results.
