A delicious twist on the classic Caesar salad with a miso dressing.

- 4 cups romaine lettuce, chopped
- 1 cup croutons
- 1/4 cup parmesan cheese, grated
- 2 tablespoons white miso paste
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 1/4 cup olive oil
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- In a small bowl, whisk together the miso paste, lemon juice, Dijon mustard, olive oil, garlic, salt, and pepper until smooth.
- In a large bowl, combine the romaine lettuce, croutons, and parmesan cheese.
- Drizzle the dressing over the salad and toss to coat.
- Serve immediately.
