A delicious twist on the classic Caesar salad with a miso dressing.

Ingredients

  • 2 cups romaine lettuce, chopped
  • 1 cup kale, chopped
  • 1/2 cup croutons
  • 1/4 cup Parmesan cheese, grated
  • 3 tablespoons miso paste
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine the romaine and kale.
  2. In a small bowl, whisk together miso paste, lemon juice, olive oil, garlic, and black pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Add croutons and Parmesan cheese, then toss again.
  5. Serve immediately.

Notes

  • Feel free to add grilled chicken or shrimp for extra protein.
  • Adjust the amount of miso to taste.
