- 200 grams dark chocolate
- 300 milliliters cream
- 150 grams sugar
- 6 eggs
- 100 grams butter
- 5 sheets gelatin
- 200 milliliters water
- 250 grams fruit purée
- Prepare the mousse by melting the dark chocolate and butter together.
- Whip the cream until soft peaks form.
- In a separate bowl, beat the eggs with sugar until fluffy.
- Combine the melted chocolate mixture with egg mixture gently.
- Fold in the whipped cream until well integrated.
- Soak the gelatin in cold water, then dissolve in warm fruit purée.
- Mix the gelatin purée with the mousse gently.
- Pour the mousse into molds and refrigerate until set.
- Prepare the mirror glaze and allow it to cool before applying.
- Once the mousse is set, pour the mirror glaze over the top.
- Chill again before serving.
