- 3 medium zucchinis
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup marinara sauce
- 1/2 cup sliced pepperoni (optional)
- Preheat the oven to 425°F (220°C).
- Slice the zucchinis into 1/4-inch thick rounds.
- In a bowl, combine the zucchinis with salt and let sit for 10 minutes.
- Pat the zucchinis dry with paper towels to remove excess moisture.
- In a mixing bowl, combine the zucchini, mozzarella cheese, Parmesan cheese, egg, Italian seasoning, garlic powder, salt, and pepper.
- Spread the mixture onto a baking sheet lined with parchment paper to form pizza crusts.
- Bake for 15-20 minutes until golden brown.
- Remove from the oven, spread marinara sauce on top, and add pepperoni if desired.
- Bake for an additional 10 minutes.
- Allow to cool slightly before slicing and serving.

- For a crisper crust, ensure the zucchini is well drained.
