A delicious low carb alternative to traditional pizza using zucchini as the base.

Ingredients

  • 3 medium zucchinis
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce
  • 1/2 cup sliced pepperoni (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice the zucchinis into 1/4-inch thick rounds.
  3. In a bowl, combine the zucchinis with salt and let sit for 10 minutes.
  4. Pat the zucchinis dry with paper towels to remove excess moisture.
  5. In a mixing bowl, combine the zucchini, mozzarella cheese, Parmesan cheese, egg, Italian seasoning, garlic powder, salt, and pepper.
  6. Spread the mixture onto a baking sheet lined with parchment paper to form pizza crusts.
  7. Bake for 15-20 minutes until golden brown.
  8. Remove from the oven, spread marinara sauce on top, and add pepperoni if desired.
  9. Bake for an additional 10 minutes.
  10. Allow to cool slightly before slicing and serving.

Notes

  • For a crisper crust, ensure the zucchini is well drained.
  • Customize toppings according to preference.
