A rich and flavorful gumbo featuring shrimp, crab, and sausage, typical of Louisiana cuisine.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound crab meat
  • 1 pound andouille sausage, sliced
  • 1 cup onion, chopped
  • 1 cup green bell pepper, chopped
  • 1 cup celery, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups okra, sliced
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon flour
  • 2 bay leaves
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat and add flour to make a roux. Stir constantly until it’s a dark brown color.
  2. Add the onion, green bell pepper, celery, and garlic. Sauté until the vegetables are softened.
  3. Stir in the andouille sausage and cook for a few minutes.
  4. Add the chicken broth, okra, Cajun seasoning, Worcestershire sauce, bay leaves, salt, and pepper. Bring to a simmer.
  5. Add the shrimp and crab meat to the pot. Cook until the shrimp are pink and cooked through.
  6. Remove bay leaves and serve hot over rice.

Notes

  • Serve with crusty bread.
  • Adjust spice levels to your preference.
  • Can be made ahead and reheated.
