Delicious and chewy Lotus Blondies made with Biscoff cookies for a unique flavor.

  • 2 cups brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup crushed Lotus Biscoff cookies

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, melt the butter and mix in the brown sugar.
  3. Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the crushed Lotus Biscoff cookies.
  7. Pour the batter into the prepared baking dish and spread evenly.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Let cool before cutting into squares.
