- 1 cup lentils
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 inch ginger, grated
- 2 tomatoes, diced
- 1 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 4 cups vegetable broth or water
- 1 teaspoon salt, or to taste
- 1 tablespoon lemon juice
- 2 tablespoons fresh cilantro, chopped for garnish
- Rinse the lentils under cold water and drain.
- In a large pot, heat the vegetable oil over medium heat.
- Add the cumin seeds and let them sizzle for a few seconds.
- Add the chopped onion and sauté until golden brown.
- Stir in the garlic and ginger, cooking for another minute until fragrant.
- Add the diced tomatoes, turmeric, coriander powder, and salt. Cook until the tomatoes soften.
- Add the lentils and vegetable broth. Bring to a boil.
- Reduce the heat and simmer for about 25-30 minutes or until the lentils are tender.
- Stir in the garam masala and lemon juice. Simmer for an additional 5 minutes.
- Garnish with fresh cilantro before serving.
Notes
- For a spicier version, add chili powder to taste.
- This dal can be served with rice or flatbread.
