Lebkuchen-Nikoläuse are traditional gingerbread cookies shaped like Santa Claus, decorated with icing and nuts, perfect for the festive season.

Ingredients

  • 250 grams honey
  • 150 grams sugar
  • 500 grams flour
  • 1 tablespoon baking powder
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cloves
  • 1 tablespoon cocoa powder
  • 1 egg
  • 100 grams chopped nuts
  • 100 grams candied orange peel
  • 2 tablespoons lemon juice
  • 1 egg white for icing
  • 200 grams powdered sugar for icing

Instructions

  1. Heat the honey and sugar in a pot until melted.
  2. Mix flour, baking powder, and spices in a bowl.
  3. Combine the melted honey mixture with the dry ingredients.
  4. Add the egg, chopped nuts, candied orange peel, and lemon juice.
  5. Knead the dough until smooth, then refrigerate for 1 hour.
  6. Preheat the oven to 180°C (350°F).
  7. Roll out the dough and cut into Santa Claus shapes.
  8. Bake for 10-12 minutes until golden.
  9. Let cool and decorate with icing made from egg whites and powdered sugar.
