- 1 cup chopped fresh parsley
- 1 cup chopped fresh cilantro
- 1 cup chopped green onions
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- In a large bowl, beat the eggs and mix in the chopped herbs, salt, and pepper.
- Heat olive oil in a skillet over medium heat.
- Pour the egg mixture into the skillet and cook until the edges start to set.
- Reduce heat and cover the skillet; cook for about 5-10 minutes until the center is firm.
- Carefully flip the omelette to cook the other side for an additional 2-3 minutes.
- Slide the omelette onto a plate and cut into wedges to serve.
