Kuku Sabzi is a traditional Persian herb omelette that is packed with fresh herbs and is both light and filling.

Ingredients

  • 4 large eggs
  • 1 cup chopped fresh parsley
  • 1 cup chopped fresh cilantro
  • 1 cup chopped green onions
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. In a large bowl, beat the eggs and mix in the chopped herbs, salt, and pepper.
  2. Heat olive oil in a skillet over medium heat.
  3. Pour the egg mixture into the skillet and cook until the edges start to set.
  4. Reduce heat and cover the skillet; cook for about 5-10 minutes until the center is firm.
  5. Carefully flip the omelette to cook the other side for an additional 2-3 minutes.
  6. Slide the omelette onto a plate and cut into wedges to serve.

Notes

  • Serve warm or at room temperature.
  • Pairs well with yogurt or feta cheese.
  • Can be enjoyed as a main dish or a side.
