- 2 pounds pork loin, trimmed
- 1 cup all-purpose flour
- 3 large eggs
- 2 cups breadcrumbs
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup vegetable oil
- 1/4 cup lemon juice
- Preheat the oven to 350°F (175°C).
- Cut the pork loin into smaller pieces and pound them to an even thickness.
- Season the flour with salt and pepper.
- Coat each piece of pork in flour, dip in beaten eggs, and then coat with breadcrumbs.
- Heat the oil in a large skillet over medium heat.
- Fry the breaded pork pieces until golden brown on both sides.
- Transfer the fried pork to a baking dish and drizzle with lemon juice.
- Bake in the preheated oven for 20 minutes.
- Serve hot.
