A delicious smaller version of the traditional Schnitzelbraten, perfect for any meal.

Ingredients

  • 2 pounds pork loin, trimmed
  • 1 cup all-purpose flour
  • 3 large eggs
  • 2 cups breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup vegetable oil
  • 1/4 cup lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cut the pork loin into smaller pieces and pound them to an even thickness.
  3. Season the flour with salt and pepper.
  4. Coat each piece of pork in flour, dip in beaten eggs, and then coat with breadcrumbs.
  5. Heat the oil in a large skillet over medium heat.
  6. Fry the breaded pork pieces until golden brown on both sides.
  7. Transfer the fried pork to a baking dish and drizzle with lemon juice.
  8. Bake in the preheated oven for 20 minutes.
  9. Serve hot.
