Delicious German cheesecake known as Käsekuchen, made with quark or cottage cheese.

- 200 grams digestive biscuits
- 100 grams unsalted butter
- 500 grams quark
- 200 grams sugar
- 1 teaspoon vanilla extract
- 3 eggs
- 2 tablespoons lemon juice
- 1 tablespoon cornstarch
- Preheat the oven to 180°C (350°F).
- Crush the digestive biscuits and mix with melted butter.
- Press the mixture into the bottom of a springform pan.
- In a bowl, combine quark, sugar, vanilla extract, eggs, lemon juice, and cornstarch.
- Pour the mixture over the biscuit crust.
- Bake for 60 minutes until golden brown.
- Let it cool and refrigerate for several hours before serving.
Notes
- For a richer flavor, substitute some quark with cream cheese.
- Serve with fresh fruit or a berry sauce.
