- 4 large potatoes, peeled and diced
- 200 grams fresh spinach
- 6 large eggs
- 1 medium onion, chopped
- 100 ml milk
- 2 tablespoons olive oil
- Salt and pepper to taste
- Preheat the oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat and sauté the onions until translucent.
- Add the diced potatoes and cook until tender.
- Add the spinach and cook until wilted.
- In a bowl, whisk the eggs and milk together, then season with salt and pepper.
- Pour the egg mixture over the vegetables in the skillet.
- Transfer the skillet to the oven and bake for about 20 minutes or until the eggs are set.
- Remove from oven, let cool slightly, and slice to serve.
