- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 3 potatoes, peeled and diced
- 1 cup green lentils, rinsed
- 1 teaspoon thyme
- 1 teaspoon cumin
- 4 cups vegetable broth
- 1 bay leaf
- salt to taste
- pepper to taste
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and carrots, and sauté until soft.
- Add the diced potatoes, lentils, thyme, cumin, and stir to combine.
- Pour in the vegetable broth and add the bay leaf. Bring to a boil.
- Reduce heat and simmer for about 30 minutes, or until the lentils are tender.
- Season with salt and pepper to taste.
- Remove the bay leaf before serving.
Notes
- For a spicier version, add a pinch of cayenne pepper.
- This stew can be made in advance and tastes even better the next day.
