A traditional Irish stew made with tender lamb, potatoes, and vegetables.

Ingredients

  • 2 pounds lamb, cut into chunks
  • 4 cups beef broth
  • 4 potatoes, peeled and chopped
  • 3 carrots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons parsley, chopped
  • 1 teaspoon thyme
  • 1 tablespoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, brown the lamb chunks over medium heat.
  2. Add onions and garlic, and cook until softened.
  3. Stir in the broth, potatoes, carrots, parsley, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for about 1.5 hours, or until the lamb is tender.
  5. Serve hot with crusty bread.

Notes

  • For best flavor, let the stew sit for a few hours or overnight before serving.
  • Serve with a side of soda bread for a traditional touch.
