A light and airy raspberry mousse that will impress your guests.

- 2 cups fresh raspberries
- 1 cup heavy cream
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 2 teaspoons unflavored gelatin
- 2 tablespoons water
- Puree raspberries in a blender and strain to remove seeds.
- In a small bowl, sprinkle gelatin over water and let sit for 5 minutes.
- In a saucepan, combine raspberry puree and sugar over medium heat until sugar dissolves.
- Add gelatin mixture to raspberry mixture and stir until fully dissolved.
- Remove from heat and let cool slightly.
- In a separate bowl, whip heavy cream and vanilla extract until stiff peaks form.
- Gently fold raspberry mixture into whipped cream until fully combined.
- Pour into serving dishes and refrigerate for at least 2 hours before serving.
Notes
- For a richer taste, use mascarpone cheese in place of some of the heavy cream.
- Top with additional raspberries or mint for garnish.
