A delicious raspberry quark mousse that is light and refreshing, perfect for dessert.

- 300g raspberries
- 200g quark
- 100g sugar
- 1 vanilla pod
- 200ml whipping cream
- 2 gelatin sheets
- 50ml water
- Soak the gelatin sheets in cold water.
- Puree the raspberries and strain to remove seeds.
- In a bowl, mix quark, sugar, and the seeds from the vanilla pod.
- Heat the water and dissolve the gelatin sheets in it.
- Add the gelatin to the raspberry puree and mix.
- Fold the raspberry mixture into the quark mixture.
- Whip the cream until stiff and gently fold it into the quark mixture.
- Chill in the fridge for at least 2 hours before serving.
Notes
- This mousse can be topped with additional raspberries or mint leaves for presentation.
- Adjust the sweetness according to your taste preference.
