A delicious raspberry quark mousse that is light and refreshing, perfect for dessert.

Ingredients

Scale
  • 300g raspberries
  • 200g quark
  • 100g sugar
  • 1 vanilla pod
  • 200ml whipping cream
  • 2 gelatin sheets
  • 50ml water

Instructions

  1. Soak the gelatin sheets in cold water.
  2. Puree the raspberries and strain to remove seeds.
  3. In a bowl, mix quark, sugar, and the seeds from the vanilla pod.
  4. Heat the water and dissolve the gelatin sheets in it.
  5. Add the gelatin to the raspberry puree and mix.
  6. Fold the raspberry mixture into the quark mixture.
  7. Whip the cream until stiff and gently fold it into the quark mixture.
  8. Chill in the fridge for at least 2 hours before serving.

Notes

  • This mousse can be topped with additional raspberries or mint leaves for presentation.
  • Adjust the sweetness according to your taste preference.
