A delicious and hearty Greek soup inspired by traditional gyros, packed with flavor and healthy ingredients.

Ingredients

  • 1 pound ground lamb
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon cumin
  • 1 cup diced cucumber
  • 1 cup Greek yogurt
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large pot, cook the ground lamb over medium heat until browned.
  2. Add onion and garlic, sauté until onions are translucent.
  3. Stir in chicken broth, diced tomatoes, oregano, thyme, and cumin.
  4. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. Stir in diced cucumber and heat through.
  6. Serve hot, topped with a dollop of Greek yogurt and garnished with parsley.

Notes

  • This soup can be made ahead and stored in the refrigerator for up to 3 days.
  • For extra flavor, add a splash of lemon juice before serving.
