- 1 pound ground lamb
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon cumin
- 1 cup diced cucumber
- 1 cup Greek yogurt
- 1/4 cup fresh parsley, chopped
- In a large pot, cook the ground lamb over medium heat until browned.
- Add onion and garlic, sauté until onions are translucent.
- Stir in chicken broth, diced tomatoes, oregano, thyme, and cumin.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Stir in diced cucumber and heat through.
- Serve hot, topped with a dollop of Greek yogurt and garnished with parsley.
Notes
- This soup can be made ahead and stored in the refrigerator for up to 3 days.
- For extra flavor, add a splash of lemon juice before serving.
