- 1 tablespoon olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 bell pepper, diced
- 4 cups spinach, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 eggs
- 1/4 cup feta cheese, crumbled
- 2 tablespoons fresh parsley, chopped
- In a large skillet, heat olive oil over medium heat.
- Add the chopped onion and cook until translucent.
- Stir in garlic, cumin, and smoked paprika; cook until fragrant.
- Add the diced bell pepper and sauté until softened.
- Mix in the chopped spinach and cook until wilted.
- Season with salt and black pepper.
- Make small wells in the mixture and crack an egg into each well.
- Cover the skillet and cook until the eggs are set.
- Sprinkle feta cheese and parsley over the top before serving.
Notes
- Serve with crusty bread for dipping.
- For extra heat, add red pepper flakes.
- This dish can be made in advance and reheated.
