Glamorgan Sausage is a traditional Welsh dish made with cheese and leeks, shaped into delicious croquettes.

Ingredients

  • 200 grams mature Welsh cheese
  • 2 leeks
  • 100 grams breadcrumbs
  • 1 egg
  • 1 teaspoon mustard
  • 1 teaspoon chopped parsley
  • salt to taste
  • pepper to taste
  • oil for frying

Instructions

  1. Cook the leeks in boiling water until soft, then drain and chop.
  2. Mix the chopped leeks with cheese, breadcrumbs, egg, mustard, parsley, salt, and pepper.
  3. Shape the mixture into sausages or croquettes.
  4. Heat oil in a pan and fry the sausages until golden brown on all sides.
  5. Drain on paper towels and serve hot.

Notes

  • Serve with a dollop of chutney for a flavorful contrast.
  • These can be made in advance and then frozen before frying.
