- 4 large potatoes, peeled and diced
- 1 medium onion, chopped
- 2 tablespoons butter
- 6 cups vegetable or chicken broth
- 1 cup cream
- salt, to taste
- pepper, to taste
- 2 green onions, chopped
- In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until softened.
- Add the diced potatoes and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Purée the soup using an immersion blender until smooth.
- Stir in the cream and season with salt and pepper.
- Garnish with chopped green onions before serving.
Notes
- This soup can be made ahead of time and reheated.
- For extra flavor, add bacon pieces or smoked sausage.
