Delicious vegetable patties served on a creamy mushroom sauce.

- 200 g mixed vegetables (carrots, zucchini, etc.)
- 100 g breadcrumbs
- 1 egg
- 1 tsp salt
- 1 tsp pepper
- 2 tbsp vegetable oil
- 300 g mushrooms
- 200 ml cream
- 1 onion
- 2 cloves garlic
- 1 tbsp fresh parsley
- Chop the mixed vegetables and sauté them in a pan until soft.
- In a bowl, combine the sautéed vegetables, breadcrumbs, egg, salt, and pepper. Form the mixture into patties.
- Heat the vegetable oil in a pan and fry the patties until golden brown on both sides.
- For the sauce, slice the mushrooms and chop the onion and garlic. Sauté them in a pan until golden.
- Add the cream to the pan and simmer for a few minutes until thickened.
- Serve the patties on a plate and drizzle with the mushroom sauce, garnished with fresh parsley.
Notes
- These patties can be made ahead of time and refrigerated.
- Serve with a side salad for a complete meal.
